To begin, we pick only cherries that are perfectly ripe for the best flavor and process them immediately to ensure maximum freshness. During the wet processing that follows, any beans that float are discarded. Finally, beans are sorted again by shape and size after the parchment layer is removed, and only beans free of defects are used to prepare our delicious coffee roast.
